Artichoke Nibbles
Makes 6 dozen
2 jars (16oz each) marinated artichoke hearts
1 small onion - finely chopped
1 clove garlic - minced
4 eggs - beaten
1/4 c fine bread brumbs
1/4 tsp salt
1/8 tsp pepper
1/2 lb sharp cheddar
2 Tbs fresh parsley - minced
1/8 tsp oregano
1/8 tsp liquid hot pepper
- Drain artichoke's marinade into frying pan
- Chop artichokes - set aside
- Add onion and garlic to frying pan. Cook on high 5min
- Mix eggs, crumbs, salt, pepper, oregano, and hot pepper
- Stir in cheese, parsley, artichokes, and onion mix
- Put into greased baking pan
- Bake at 350 for 30min, or until set when lightly touched
- Let cool in pan, then cut into 1" squares
- Serve cold or reheat at 325 for 10-12min
