Black Bean Cakes
15 oz black beans
3 cloves garlic
1/4 tsp chili powder
2 Tbs fresh cilantro
1 egg
1/2 Tbs ground cumin
1/4 tsp salt
1/2 c bread crumbs
- Drain beans place in a food processor with garlic. Process until
smooth, about 1 minute. Scrape down the sides.
- Add bread crumbs, egg and seasoning. Process 30 seconds until well
blended.
- Preheat a nonstick or lightly oiled griddle. Make pancake using 1Tbs
of batter. Flip and spread out with the spatula to about 2 inches in
diameter.
- Cook in batches over medium-high heat until the bottom is brown and a
few bubbles appear on top, about 2 minutes. (Mine weren't that runny).
Turn and cook another 1-2 minutes.
- Serve with sour cream, guacamole, and/or salsa
