Potato Pancakes
3 c peeled raw potatoes
1/2 onion
2 eggs
1 tsp salt
1 Tbs flour
1/4 tsp baking powder
- One way is: use a cuisinart to grate potato and onion
- Add egg and rest of ingredients. Blend just a few turns to barely incorporate the ingredients into potato and onion
- OR: Use a blender
- Put eggs, onions, salt, baking powder and 1/2c potato into blender. Cover and process on low
- Add remaining potatoes, cover and process on high until all potato cubes have been blended, DO NOT OVERBLEND
- Pour 1/2" oil into frying pan
- Take 1Tbs batter and put it into very hot oil
- Brown well on one side before turning over and browning on other
- Remove from frying pan and place on layers of paper towels
- Freezing: drain well and let cool a little. Put on a cookie sheet in a single layer and cover with plastic wrap. When frozen they can be put in plastic bags. When ready to serve, remove from freezer and put in a preheated 400 oven for 10min or until piping hot
NOTE: Serve with applesauce, sour cream or make large pancakes and serve as an appetizer with smoked salmon, a little caviar, and a dab of sour cream
