Red Mushrooms
1 c red wine
1/2 c red wine vinegar
1/3 c olive oil
2 Tbs brown sugar
2 cloves garlic - minced
1 tsp red pepper flakes
1 red bell pepper - chopped finely
1 lb small fresh mushrooms - chopped
1/4 c scallions
1/2 tsp salt
1/4 tsp pepper
- In saucepan place all ingredients but chopped bell pepper, mushrooms,
scallions, salt and pepper. Bring to boil
- Pour half sauce into container and set aside
- Add peppers and mushrooms
- Boil until mushrooms are tender, add more suace as necessary
- Add set-aside sauce after mushrooms are done and continue simmering
for 5min
- Remove from heat. Add scallions, and season to taste.
NOTE: great served over a bed of rice or paste. It can also be
enjoyed on a salad or by itself, hot or cold.
