Breakfast Apple Bread Pudding
1 baguette at leat 26 inches long, cut into 1 1/2 inch slices
8 eggs - beaten
3 cups milk
1 tsp vanilla
3/4 c sugar
4-5 Granny Smith apples - peeled and slliced
2 tsp cinnamon
Pinch of nutmeg (optional)
2 Tbs butter
- Preheat oven to 400, lightly grease 13x9 baking pan
- Line pan with slices of bread
- Combine eggs, milk, vanilla, and 1/4 c sugar in a large bowl
- Pour 1/2 liquid over bread. Place sliced apples over bread. Pour
remaining liquid over apples
- Combine remaining sugar, cinnamon, and nutmeg. Sprinkle over apples
- Place small dabs of butter over the top
- Bake uncovered for 30-35 min. Allow to stand 10 minutes
NOTE: Serve with maple syrup, whipped cream, and/or ice cream.
NOTE #2:To make the night before; Put together and place covered in the
refrigerator. In the morning place in the oven for 45 minutes.
