Cinnamon Apple Chunk Bread
2 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
Optional pinch of nutmeg
1/2 c butter or margarine
1 c sugar
2 eggs
1 tsp vanilla
2 large apples (gala, janagold, fuji) - peeled, cored, chopped
1/2 c sugar
1 tsp cinnamon
1/4 c brown sugar 1 tsp
cinnamon 2 Tbs
butter 1/2 c flour
- Let apples, sugar
and cinnamon sit covered in bowl for at least 30min
- Grease and lightly
flour bread pan. Preheat oven to 350
- Combine dry ingredients - set
aside
- In large mixing bowl combine butter and sugar
- Add eggs one
at a time, then vanilla, then apples
- Slowly add dry ingredients and
mix until just combined
- Pour batter into bread pan and smooth using
spatula
- Using a fork, combine sugar, cinnamon, and butter in small
bowl. Use clean hands to form a homogenous mix, add flour until dry with
lumps. Sprinkle over batter.
- Place in oven, bake 50-60min or until toothpick inserted comes out
clean.
