Orange Muffins
1 package yeast
1/4 c warm, not hot, water
1 c milk - scalded and cooled to lukewarm
1 1/4 c sugar
3/4 c butter or margarine
grated peel of orange
1 tsp salt
4 c flour
1 egg - slightly beaten
- Place 1/2c butter, salt, and 1/2c sugar in a large bowl
- Add milk to dissolve sugar and melt butter
- Soften yeast in water and add with egg to milk mix
- Stir in 3 1/2c flour, one cup at a time
- Scrape dough from sides of bowl.Brush sides of bowl and top of dough with butter
- Cover and let rise in a warm place until double in size (2-3hrs)
- Turn out on a well-floured board
- Knead lightly
- Roll into a rectangle ~1/4" thick
- Cream together 1/4c butter, 3/4c sugar, and orange peel
- Spread milk mix evenly over dough
- Roll up as for a jelly roll
- Chill for an hour
- Cut into 1" slices
- Place on greased baking dishes, cut side down
- Let rise again til doubled in size
- Bake at 425 for 10-15min
