Acini de Pepe Fruit Salad
1/2 lb Acini de Pepe
1 egg
1 Tbs flour
1/2 c sugar
1/4 tsp salt
15 oz can crushed pineapple
16 oz can mandarine oranges
1 c mini-marshmallows
1 c whipping cream
- Prepare noodles according to package
- In heavy saucepan beat egg with whisk until foamy
- Stir in sugar, flour, salt, and pineapple juice
- Cook over low heat, stirring constantly, until thickened
- In a large bowl combine Acini with egg mixture
- Chill 1hr
- Stir in fruit, marshmallows, and cream
- Chill and serve
