Chocolate Cookie Cake
2 2/3 c flour
2 1/4 c sugar
1 1/4 tsp baking soda
3/4 tsp salt
1/2 tsp baking powder
1 1/3 c milk
8 oz sour cream
5 oz unsweetened chocolate - melted
1/2 c butter or margarine
3 eggs
2 tsp vanilla
Cookie Filling
Chocolate Butter Frosting
4 chocolate sandwich cookies
- Grease and lightly flour 2: 8" or 9" rounds
- Combine flour, sugar, baking soda, baking powder, and salt
- Add milk, sour cream, chocolate, butter, eggs, and vanilla. Beat with mixer on low ~1min or until combined
- Beat on high 3min, scraping down sides
- Place 1/2 batter in medium bowl. Cover and chill
- Divide remaining batter between pans
- Bake at 350 for 20min or until toothpick comes out clean
- Cool on racks 10min, remove from pans
- Wash pans. Grease and lightly flour pans again
- Divide remaining batter between pans
- Bake and cool as before
- Reserve 3/4c filling without cookie for garnish
- When completely cool put layer on a serving plate. Top with filling
- Repeat twice, add top
- Frost entire cake with chocloate butter frosting
- Stir reserved frosting with 2-3 tsp milk. Spoon onto center of top of cake. Garnish with crushed cookie sandwiches
