Baked Chicken with Potatotes
4 boneless skinless chicken breasts - halved
1 tsp black pepper
3 medium cloves garlic - minced
2 tsp dried oregano
5 new potatoes
2 medium onions
1/4 c parmesan
1 Tbs garlic salt
2 c chicken broth
1 c peas - cooked
1 c corn - cooked
- Preheat oven to 350
- Clean chicken, position in center of 13x9 pan
- Mix garlic and herbs, place over chicken
- Cut potatoes into 8 pieces and onions into 6 pieces
- Arrange potatoes and onions around chicken
- Sprinkle veggies with garlic salt
- Pour 1 cup broth over chicken and veggies
- Cover and bake 45min
- Uncover and add remaining stock and veggies
- Top with cheese and cook another 15min
