Calzones
Dough
- 1 c warm water
- 1 tsp active dry yeast
- 1 tsp honey
- 1 Tbs olive oil
- 1/2 tsp dried oregano
- 1 1/4 c whole wheat flour
- 1 1/4 c unbleached white flour
Filling
- 3 c ricotta
- 1/2 c parmesan
- 1/2 c mozarella
- 4 cloves garlic - minced
- 2 Tbs basil
- 1/2 tsp salt
Topping
- 1 egg - beaten with 1 tsp water
- 1 1/2c marinara
- Mix dough except flours, let sit until foamy (5-10min)
- Slowly work in flours until blended
- Knead dough on floured surfce until smooth and not sticky (~5min)
- Let rise, in a warm dry place, until doubled in size
- Mix all ingredients in a medium bolwl
- Preheat oven to 425. Grease 2 baking sheets.
- Knead dough 5min
- Separate dough into 8 pieces and make balls
- Roll each ball into 6-7" circles
- Spoon 1/2c filling into one side of each circle. Fold in half and pinch to seal
- Place calzones on sheet.
- Brush calzones with egg
- Bake 15-20min until light brown
- Heat marinara sauce, serve
NOTE: if desired add other toppings (cooked pepperoni, sausage, onion, spinach...)
