Cheesy Chicken Rolls
4 boneles skinless chicken breasts
2 Tbs scallions - chopped
1 Tbs fresh parsley
1 clove garlic - minced
1/2 of a 1/4 lb stick caraway, cheddar, gruyere, or blue cheese
1 egg - beaten with 1 Tbs water
1/4 c flour
1/4 c bread crumbs
1 Tbs butter or margarine
1 Tbs oil
- Rinse chicken, pat dry
- Place each breast between two pieces of wrap. LIGHTLY pound into rectangle 1/8" thick
- Remove wrap, sprinkle with salt and pepper
- Combine onion, parsley, and garlic. Sprinkle onto chicken
- Cut chilled cheese into 4 pieces lenthwise
- Place a stick in center of chicken and roll, jelly-roll style
- Put flour into a bowl
- Coat rolls with flour and dip in egg, coat with crumbs
- Cover and chill 1-24hrs
- Melt butter in skillet, add oil and chicken
- Cook over medium heat until golden brown turn it so it browns on all sides
- Transfer to a baking dish
- Bake at 400 for 15-18min or unti lchicken is done
- Spoon drippings over roll and serve
