Chicken Jumbo Shells
at least 16 jumbo pasta shells
1 Tbs olive oil
1 1/2 c tomatoes - chopped
1/4 c celery - thinly sliced
1/4 c carrots - thinly sliced
2 large cloves garlic - minced
2 breasts chicken - cooked and cubed
2 Tbs white wine or chicken broth
32 oz ricotta cheese
2 c seasoned croutons
- Cook pasta shels
- Cook veggies in oil 5-7min (in 10" skillet) stirring until crisp and tender
- Stir in chicken and wine. Simmer 5min. Remove from heat
- Stir in remaining ingrediens
- Scoop into shells and place (filled side up) in 13x9
- Cook at 400 for 10min
NOTE: this is good served with an alfredo sauce
