Crouton and Chicken Lasagne
9-12 sheets lasagne
2 Tbs olive oil
1 1/2 c tomatoes - chopped
1/4 c celery - finely chopped
1/2 c carrots - finely chopped
3 cloves garlic - minced
2 chicken breasts - cooked and cubed
1/2 c chicken broth
32 oz ricotta
1 package seasoned croutons (~3cups)
4 Tbs parmesan cheese
- Preheat oven to 425
- Cook lasagne sheets
- In skillet saute vegetables in oil for 5-7min
- Add chicken and broth. Simmer for 5min
- Remove from heat and add croutons. Mix well
- Add cheese. Mix well
- In baking dish place 3-4 sheets lasagne
- Cover with 1/2 cheese mix, lasagne, cheese, lasagne
- Sprinkle with parmesan
- Bake for 10min or until golden brown.
