Fettucini Alfredo a la Karen
2 Tbs olive oil
6 large cloves garlic - minced
1 large red pepper - seeded and cut into thin strips 1" long
3 Tbs butter or margarine
3 Tbs flour
1 c heavy cream
1 c milk
1 1/2 c parmesan
1/4 tsp salt
1/4 tsp pepper
1 lb fry fettucini
2 Tbs dried basil
1 Tbs dried parsley
- Make fettucini al dente (according to package)
- Saute garlic, peppers, herbs in oil on medium for 3-4min. Remove from heat
- Melt butter in saucepan, whisk in flour and let cook 1-2min
- Slowly add cream and milk whisking until thick (5min)
- Add cheese, salt and pepper. Stir until cheese is melted
- Add sautedd veggies, reduce heat to simmer
- Cook for a few minutes until hot
- Remove from heat
- Pour over fettucini, toss and serve
