Mexican Chicken Casserole
4 boneless skinless chicken breasts - cut in 12 strips
1 can cream of chicken
1 1/2 c milk
1 c salsa
1/2 c green onions - chopped
1 c cheddar cheese - grated
1 c jack chesse - grated
1 bag tortilla chips
- Brown chicken in fry pan with salt and pepper (until outside white, inside pink)
- Crush 1/3 tortilla chips and place in bottom of 13x9
- Place cooked chicken over chips
- Mix cream of chicken, milk, salsa, and green onions
- Microwave for 4 minutes
- Pour over chicken
- Crush 1/2 of remaining chips and place on top of rest
- Top with cheese. Cover
- Cook at 325 15min, then top with rest of chips
- Cook uncovered until chicken it cooked through (~15min)
