Monterey Casserole
1 1/2-2 c cooked rice
7 oz can of whole ortega chili peppers
Monterey Jack cheese
2 c zucchini - sliced and steamed
2 c sour cream
1 tsp oregano
1 tsp salt
1 Tbs bell peppers
1 Tbs green onion
- Put rice in botton of casserole dish
- Spread chili peppers over rice
- Put slice of cheese on top of chilis
- Put zucchini slices on top of cheese
- Mix remaining ingredients and spread over top
- Sprinkle with grated jack cheese
- Bake at 350 for 30min
