Neopolitan Chicken Casserole
4 breasts chicken - on bone, deskined
1/4 c flour
Salt and pepper
2 Tbs olive oil
1 1/2 yellow onion chopped
3 cloves garlic - minced
1 Tbs paprika
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp garlic salt
1/2 tsp pepper
1 tsp salt
3/4 c red wine
1 can chicken broth
3 tomatoes - chopped
1/4 c fresh cilantro - chopped
8 red potatoes - chopped
1 yellow bell pepper - julienned
- Rinse chicken and pat dry
- In bag combine flour, salt and pepper to taste.
- Place chicken in bag one piece at a time and shake to coat.
- Brown chicken in large frying pan using oil. Remove and place in a large baking dish
- In the same frying pan place onion and garlic. Cook on high til tender
- Mix herbs and add to onions. Mix well
- Add wine and 1 cup chicken broth. Bring to a boil
- Add tomatoes and cilantro. Boil for 15min
- Pour over chicken
- Top with potatoes and bell pepper. Baste potatoes in sauce and sprinkle with salt.
- Cover and bake at 350 for 60min. Remove cover and check potatoes. Baste and cook uncovered until potatoes and chicken are done.
