Penne with Chicken, Broccoli, and Cheese
2-3 medium stalks broccoli - divided into tiny sprigs
1/4 c butter or margarine
4 boneless skinless chicken breasts - cut in strips
2 cloves garlic - minced
6 c dried penne
1/2 c dry white wine or chicken broth
1 c panna da cucina or heavy cream
3 1/2 oz Gorgonzola - rind removed and diced small
3/4 c shredded parmesan
salt and pepper
- Cook broccoli 4min, remove from steam
- Melt butter in skillet
- Add chicken and garlic. Saute over medium heat for 3min or until chicken becomes white
- Cook pasta according to package
- Pour wine and cream over chicken. Salt and pepper to taste
- Simmer 10min stirring occsionally
- Add broccoli, cover until tender
- Add cheese, mix until it melts
- Pour cheese mix over pasta, mix thoroughly
NOTE: good cold or hot.
