Salmon a la Ladybug
- 1 Tbs olive oil
- 1 piece salmon
- 2 lemons
- 1 sprig rosemary
- 3 medium zucchini - cut in sticks
- 1 medium onion - cut in rings
- Salt and Pepper
- 1/4 c basil pesto
- Place oil in medium frying pan with lid.
- Wash and dry salmon. Place salmon skin-side up on hot frying pan.
Squeeze juice of 1/2 lemon over meat. Add 1/4 c water. Cover and allow to
cook 5 minutes
- Flip meat and add zucchini and onion. Sprinkle with salt, pepper,
rosemary and juice from 1 lemon. Cover and cook 10 minutes.
- May have to add more water and continue cooking depending on
thickness of meat.
- Remove from heat and place on serving plate. Squeeze remaining 1/2
lemon over salmon and top with pesto.
NOTE: For more crunchy zucchini salt for 30 mintues before cooking, make
sure to reduce salt in sauce
