Twice Baked Potatoes
1 baking potato
1 Tbs butter or margarine
1 Tbs sour cream
1/4 c milk
1/4 c shredded cheddar cheese
- Bake potato (~1hr at 450)
- Scoop out insides, mash
- Add butter and sour cream, mix until combined
- Add milk to desired consistency, beat until light and fluffy
- Add 3/4 cheese, put back in skin
- Top with the rest of the cheese
- Return to oven at 300 for 10min
NOTE: for variations add a pinch of garlic, top with bacon bits or chives
