Zucchini Parmesan
- 3 medium zucchini
- 1 jar marinara sauce or
- 1 can stewed tomatoes
- 1 medium onion - chooped
- 2 cloves garlic
- minced
- 8 oz mozarella cheese - sliced
- 1/4 c paremesan cheese
- Wash and slice zucchini diagonally into long circles
- Cut in half and place in bottom of 8 x 8 baking pan
- Prepare sauce. Saute onions and garlic. Add salt and pepper, add
tomoatoes. Simmer 8 min.
- Pour over zucchini.
- Cover with aluminum foil and place in 350 degree oven for 35 minutes
- Top with mozarella and return for 8 minutes
- Remove foil and top with paremesan.
- Return to oven for 15 minutes or until golden brown.
NOTE: For more crunchy zucchini salt for 30 mintues before cooking, make
sure to reduce salt in sauce
