Pear Salad
1 large head butter lettuce - chilled
1/4 c blue, goat, or gorganzola cheese
1/2 c walnuts or pecans
1 c sugar
1 ripe pear - thinly sliced
1 large lemon
1/2 c olive oil
1 Tbs sugar
salt and pepper
- Melt 1c sugar in frying pan over med heat. When melted stir in nuts. Remove from heat, separating nuts on sheet of aluminum foil
- Open lettuce into large salad bowl, keeping it in large pieces
- Add cheese, nuts, and pear
- In a small bowl, mix juice of lemon, olive oil, sugar, salt and pepper to taste
- Pour dressing over salad
