Potato and Onion Soup
1 c potato - peeled and cut into chunks
1 c onions or leeks - peeled or trimmed, and cut into chuncks
3 c chicken broth
1 c milk
salt and pepper
chopped parsley or chives
- Combine potato, onion, and stock in saucepan
- Simmer uncovered until potato is very tender (~15min)
- Puree in blender until very smooth
- Stir in milk and reheat gently, don't boil
- Season to taste, garnish and serve
NOTE: This soup is somewhat bland, best for those days when you want something warm and filling to eat/drink
