Teriyaki Salad
1 bag mixed greens
goat cheese
a few pecans
3 artichoke hears - chopped
2 tomatoes - chopped
1/2 lb salmon (or chicken) - 1" cubes
2 cloves fresh garlic - chopped
1/2 red onion - chopped
1 c soy sauce
1 heaping Tbs brown sugar
- Marinate last 5 ingredients for at least 30 min
- Fry marinate until cooked through and sauce is condenced
- Add tomatoes and artichoke and remove from heat, let sit 5-10min
- Place mixed greens in bowl or on plate
- Crumble cheese and pecans over lettuce
- Top with salmon mixture
