Black Beans and Tofu
- 1 container extra firm tofu
- 2 cans black beans
- 1 med. onion
- 1 green bell pepper
- 3 small tomatoes
- 1 can corn (optional)
- vegetable oil
- white pepper (black pepper will do but white pepper is preferred here)
- garlic powder
- chili powder
- salt
Slice tofu very thinly (1/8 inch thick strips) and fry in oil. Season
with white pepper, garlic powder, chili powder, and salt to taste.
Dice vegetables, and put beans and vegetables in a separate pan and
heat.
Mix and serve with rice.
Serves 5.
Preparation time: 30 minutes.
