Corn Bread
- 2 1/4 cups soymilk
- 2 1/4 tbsp vinegar
- 2-3 tbsp vegetable oil
- 1.5 cups flour (whole wheat or white is OK)
- 1.5 cups cornmeal
- 3 tbsp sugar
- 1 tsp salt
- 1.5 tsp baking powder
- 0.75 tsp baking soda
Mix wet and dry ingredients separately, then combine. Bake 25 or 30
minutes at 425 degrees. Test with a toothpick -- when it comes out
clean, the bread is ready.
