French Toast

Don't throw out your day-old bread! Use it in this delicious egg- and dairy-free version of this brunch classic.

Place the soy milk, flour, yeast, sugar, and cinnamon in a small bowl and mix vigorously with a wire whisk or beater. Pour the mixture into a wide, shallow bowl or pie pan. Dip the bread slices into the soy milk mixture and soak until the bread is soft.

Heat the oil in a skillet over medium heat. Fry each bread slice until both sides are golden brown and crispy, about 5 to 7 minutes per slice. Add more oil if necessary to prevent sticking.

Serve hot with fruit syrup, maple syrup, or applesauce.
