Refried Beans
Pintos, like all beans, are a good source of protein. This recipe can
be used as a side dish on a Mexican menu or as the basis for tostadas
or burritos.
- 3 cups cooked pinto beans
- 1 1/2 cups chopped onion
- 1/2 cup green bell pepper, seeded and minced
- 1/4 tsp. black pepper
- 1/4 tsp. coriander
- 1 1/2 tsp. sea salt
- 3 cloves garlic, minced
- 2 tsp. ground cumin
- 3 Tbs. canola oil
Sauté the onions, green pepper, and spices until softened. Add
the pintos, cover, remove from heat, and allow to heat through. Put
back on heat, stir, adjust seasonings, and serve. It is important
that you wait to salt until beans are fully cooked, otherwise the
skins will not soften.
