Mixed with the sweet potatoes and apples is a peanut butter crumb that children will love. For a different flavor, substitute almond butter for the peanut butter.
Makes about 6 servings.
Preheat oven to 350 degrees.
With your fingers, rub together oats, flour, soy flour, and peanut butter until a coarse crumb forms. Set aside.
Peel sweet potatoes and slice thinly. Set aside.
Peel and core apples, and slice thinly. Combine sliced apples and sliced sweet potatoes in a casserole dish. Add maple syrup, soy milk, and crumb mixture. Toss gently to combine.
Bake, covered, for 45 to 60 minutes or until sweet potatoes are tender. Serve warm or cold. Refrigerate leftovers.
