Sweet Rainbow Delight
- 2 apples, grated
- 2 carrots, grated
- 2/3 cup shredded coconut
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Toss all ingredients together in a bowl and serve.
Variation: Add chopped dates instead of raisins.
Serves 6.
