Tomato Lentil Soup
- 1 cup chopped broccoli
- 1 cup orange lentils
- 2 cups chopped potatoes
- 1 apple, peeled and chopped
- 2 onions, diced
- 2-3 cloves garlic, minced
- 1 cup chopped mushrooms
- 1 can diced tomatoes
- salt, pepper, oregano, thyme, cumin
Cook onion and garlic in a small amount of water.
Pour in tomatoes and then add can full of water.
Add all remaining ingredients; add spices to taste.
Cook until lentils are done.
Serves: 5-6
Preparation time: 60 minutes
